<p><span><em>Across Canada, Chefs are facilitating local food movements by creating links between local farms and customers in their dining rooms through purchasing local products and featuring them on their menus. Restaurants and Chef&rsquo;s interface with society in a unique way, and combined with purchasing power, they have the potential to be a strong driver for sustainable food systems change. Chefs are capable of introducing foods and influencing consumer choice; the root of many local food systems can be traced to the link between restaurant Chefs and farmers; and restaurant food expenditures provide a viable market for local farm products.&nbsp;</em></span></p>
<p><span><em>&nbsp;</em></span></p>
<p><span><em>We wanted to hear directly from some of Calgary&rsquo;s top Chefs about what they were doing in their kitchens, at their order desks, and at their back doors to support a sustainable local food system for Calgary. We caught up with some of them at the annual Slow Food Roots and Shoots Dinner at River Caf&eacute; and this is what we heard:</em></span></p>

<p>We know that everyone is eagerly awaiting our opening day and we are so excited to finally be able to be up and running. We are just finishing up the final touches to make Boxwood a perfectly welcoming cozy destination! Just two more sleeps until we open!</p>
<p>We had a test run on the weekend and it was great! It was so good to be in service and to see Chef Andy in the Kitchen working his magic with Sous Chef Joy and their wonderful team. That rotisserie pumped out some killer protein...not to mention the potatoes that Andy had cooking in the drippings all day!</p>
<p>We cannot wait to see you at Boxwood Wednesday night!</p>

It is so exciting! The staff are all anxious to get in there and get to work! The installations are going very well and it is looking beautiful!&nbsp;</span></p>
<p><span style="font-size: 110%;">Sal, Andy, Rob and I had a wine tasting at Metrovino yesterday with Richard and we are very excited about the wines we will be offering for the opening list. I cannot wait for everyone to try them. They will not disappoint!&nbsp;</span></p>
